Gluten/dairy/refined Sugar-Free Pumpkin Bread

Ingredients

  • 3 eggs
  • 1 cup organic pumpkin puree
  • 1/3 cup full fat coconut milk
  • 1/3 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 3/4 cups blanched almond flour
  • 1/4 cup tapioca flour
  • 1 tbsp coconut flour
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • pinch fine grain sea salt

Preparation

  1. Set oven to 350 and line a medium loaf pan with parchment paper

  2. Whisk together eggs, pumpkin, coconut milk, maple syrup & vanilla in a large bowl

  3. Mix all other ingredients into a separate bowl, then slowly add to wet ingredients until just mixed

  4. Pour batter into loaf pan, stick in oven for 1 hour, or until a toothpick inserted in the center comes out clean

  5. Remove from oven, let sit a few minutes and then remove from loaf pan using parchment paper

  6. Let cool for 2 hours before cutting
