Gluten/dairy/refined Sugar-Free Pumpkin Bread
Ingredients
- 3 eggs
- 1 cup organic pumpkin puree
- 1/3 cup full fat coconut milk
- 1/3 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1 3/4 cups blanched almond flour
- 1/4 cup tapioca flour
- 1 tbsp coconut flour
- 1 tsp baking soda
- 1 tbsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- pinch fine grain sea salt
Preparation
Set oven to 350 and line a medium loaf pan with parchment paper
Whisk together eggs, pumpkin, coconut milk, maple syrup & vanilla in a large bowl
Mix all other ingredients into a separate bowl, then slowly add to wet ingredients until just mixed
Pour batter into loaf pan, stick in oven for 1 hour, or until a toothpick inserted in the center comes out clean
Remove from oven, let sit a few minutes and then remove from loaf pan using parchment paper
Let cool for 2 hours before cutting
