Healthy Carrot Cake

Ingredients

  • 2 dl oats
  • 2 dl walnuts
  • 1 carrot
  • 1 tsp fresh ginger
  • 10 dates
  • 1 tsp cinnamon
  • 0,5 dl water

Preparation

  1. Add oats, walnuts, the carrot and ginger into a food processor and pulse for a minute. Add the rest of the ingredients and mix until you have a dough. Press the dough into a form and set aside

  2. For the frosting: 1 dl soaked cashews, 200 g silken tofu, 1 tsp vanilla powder, 2 tsp lemon juice, 3 tbsp agave syrup.

  3. Soak the cashews for a few minutes. Then add all the ingredients to a food processor and mix until the frosting is smooth. Add on top of the dough and but the carrot cake in the freezer to set. Chop into pieces when its ready to eat and don’t forget to let the cake defrost before eating. Enjoy
