Healthy Cookie Dough Fudge

Ingredients

Cookie dough

  • 1 cup gluten free flour
  • 1 tbsp peanut butter
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/3 cup vegan choc chips

Fudge layer

  • 3/4 cup vegan choc
  • 1 tbsp peanut butter
  • 1 tsp coconut oil

Preparation

  1. Combine all the ingredients for the cookie dough together and mix well. Press mixture into silicone muffin liners, press down slightly and freeze for 15 minutes.

  2. Microwave the fudge ingredients until just melted, mix well then pour over top the cookie dough layer. Freeze for 30 minutes.
