Homemade Chocolate Sunflower Butter Cups

Ingredients

  • 1/2 cup of coconut oil
  • 1/2 cup cacao or cocoa powder
  • 1/4 cup maple syrup
  • 1-1/2 cups of your favorite dark chocolate chips
  • spoonful of coconut oil
  • 1/2 cup sunflower butter (or any other nut butter)
  • 1 tbsp lucuma powder
  • 1 tbsp maple syrup
  • 1 tsp maca powder
  • dash of salt

Preparation

  1. The chocolate can be done in 2 ways

  2. For a healthier, lower sugar option, you can melt 1/2 cup of coconut oil and mix in 1/2 cup cacao or cocoa powder and 1/4 cup maple syrup.

  3. Alternatively, you can just melt 1-1/2 cups of your favorite dark chocolate chips with a spoonful of coconut oil mixed in.

  4. When chocolate is melted, use half of the batch of chocolate to fill mini muffin tins halfway.

  5. Put in fridge or freezer to set while you make filling.

  6. Filling: combine 1/2 cup sunflower butter (or any other nut butter), 1 tbsp lucuma powder, 1 tbsp maple syrup, 1 tsp maca powder and a dash of salt.

  7. Divide the nut butter mixture into muffin tins and then pour the remaining chocolate mixture on top and let set in fridge or freezer.

  8. Top with various superfoods, like raw cacao nibs, goji berries, or hemp seeds.
