Lamington Fudge Bites
Ingredients
- 1 cup of gf oats
- 1 cup of cashews
- 10 medjool dates
- 1 teaspoon of vanilla essence/powder
- 1/3 of dried cranberries
- 1/4 shredded coconut
Preparation
Roughly chop your dates prior to adding into your vitamix/blender - trust me they blend better
Add remaining ingriedents in and mix until well combine
Press mixture into a slice tin, easiest without any baking paper due to the sticky mixture, and top with some extra coconut
Pop into the freezer for 3 hours or overnight to set
Take out of freezer, chop and it's ready to eat
Keep in fridge for a week or the freezer for up to a month
