Lamington Fudge Bites

Ingredients

  • 1 cup of gf oats
  • 1 cup of cashews
  • 10 medjool dates
  • 1 teaspoon of vanilla essence/powder
  • 1/3 of dried cranberries
  • 1/4 shredded coconut

Preparation

  1. Roughly chop your dates prior to adding into your vitamix/blender - trust me they blend better

  2. Add remaining ingriedents in and mix until well combine

  3. Press mixture into a slice tin, easiest without any baking paper due to the sticky mixture, and top with some extra coconut

  4. Pop into the freezer for 3 hours or overnight to set

  5. Take out of freezer, chop and it's ready to eat

  6. Keep in fridge for a week or the freezer for up to a month
