Milk Ladder Step 2 - Muffins

Ingredients

  • * 2 cups (250g) flour * 2.5 tsp (10g) baking powder
  • * 2-3 Tbsp sugar (optional)
  • * Pinch salt
  • * 1/4 cup (50ml) vegetable oil
  • * 1 cup (250ml) milk
  • * Around 1/2 cup (110g) grated or mashed fruit eg. Apple, pear, banana (or grated dairy free cheese for a savoury version)

Preparation

  2. Mix the dry ingredients

  3. Whisk the oil and milk together, then add to the dry ingredients

  4. Add in the fruit or dairy free cheese

  5. Bake at 180-200*C for 15-20 mins (mine needed 20mins at 180)

  6. Makes 10 (large) muffins but my mixture yielded 11 muffins! Start offering your LO 1/2 muffin (or less) and work up to 1 muffin. 1 muffin is the equivalent of 25ml milk or 0.875g milk protein
