Nut-Free Breakfast Muffins

Ingredients

  • 1 1/2 cups of blended soft banana and apple
  • 1/2 tsp of vanilla essence
  • 1/4 cup coconut oil
  • 2 Tbs rapeseed oil
  • 1/3 cup of melted cacao butter
  • 1 1/2 cups of tiger nut flour
  • 1 1/2 cups of oats
  • 1/2 of tiger nut milk
  • 2 Tbs of corn flour
  • 1/4 tsp of salt
  • 1 1/2 tsp of baking powder
  • 1 1/2 tsp of baking soda
  • 1/2 cup of coconut sugar
  • 1/2 cup raisins
  • 1 tsp of cinnamon

Egg replacement

  • 2 Tbs of ground flaxseed
  • 2 tbs arrow root powder
  • 6 Tbs of tiger nut milk

Preparation

  1. Whisk together all of the wet ingredients, including oils, egg replacement, and banana and apple mash.

  2. Add the sugar, cinnamon and mix everything together.

  3. Add the flour, corn flour, oats, baking powder, salt, soda and mix until nice and fluffy.

  4. Put the mixture into small muffin forms lined with parchment paper.

  5. Cook at 180C for 15-20 minutes.
