Nut-Free Breakfast Muffins

Ingredients

  • recipe:
  • 1 1/2 cups of blended soft banana and apple
  • 1/2 tsp of vanilla essence
  • 1/4 cup coconut oil @thecoconutco
  • 2 tbs rapeseed oil @mr_organic
  • 1/3 cup of melted cacao butter
  • 1 1/2 cups of tiger nut flour @thetigernutcompany
  • 1 1/2 cups of oats
  • 1/2 of tiger nut milk
  • 2 tbs of corn flour @sumawholefoods
  • 1/4 tsp of salt
  • egg replacement :
  • 1 1/2 tsp of baking powder
  • 1 1/2 tsp of baking soda
  • 1/2 cup of coconut sugar
  • 1/2 cup raisins
  • 1 tsp of cinnamon

Preparation

  1. Whisk together all of the wet ingredients (oils, egg replacement, banana and apple mash)

  2. Add the sugar, cinnamon and mix everything together

  3. Add the flour, corn four, oats, baking powder, salt, soda and mix until nice and fluffy

  4. Put into the small muffin forms lined with parchment paper

  5. Cook at 180C for 15-20 minutes
