Oat, Apple & Cinnamon Cookies

Ingredients

  • 2 cups oats (gluten free oats also work)
  • 1 cup wholegrain flour (rice flour also works)
  • 1 1/2 tsp baking powder
  • 3tsp ground cinnamon
  • 1/2 tsp salt
  • 2 apples, one finely chopped and one grated
  • 1/2 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp linseed oil - 1/2 cup maple syrup

Preparation

  1. Preheat your oven to 180 degrees c and line a baking sheet with non-stick paper

  2. In a large bowl mix the oats, flour, baking powder and salt

  3. In another bowl, mix the apples, milk, egg, vanilla, oil and maple syrup

  4. Pour the wet mixture into the flour mixture and mix until just combined

  5. The mix will be quite wet

  6. Form into patties (these will not spread so you can put them quite close together) - bake for about 25 minutes until the top is just golden brown

  7. Let them cool for a few minutes and then transfer to a cooling rack
