Pb Chocolate Chip Cookies

Ingredients

  • 3/4 cup all-purpose flour (gluten-free 1:1 flour can be used)
  • 2/3 cup almond flour
  • 1/3 cup granulated sugar (coconut sugar can be used)
  • 1 tsp. baking powder
  • 1/4 cup creamy peanut butter
  • 1/2 cup almond milk
  • 1 egg
  • 1/4 cup chocolate chips (mini chocolate chips can be used)

Preparation

  1. Preheat the oven to 350°F and spray or line a mini muffin tin.

  2. In a mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, and baking powder.

  3. In a small bowl, whisk together the creamy peanut butter, almond milk, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until combined. The dough will be wet.

  5. Scoop the batter onto the baking sheet to make 11 cookies.

  6. Bake for 10-13 minutes.
