Peanut Butter Banana Muffins

Ingredients

  • 4 super ripe bananas, mashed
  • 1/2 C @santacruzorganic creamy peanut butter (no added sweetness)
  • 1/2 C @addjoi cashew milk
  • 1 tsp @simplyorganicfoods Madagascar Vanilla
  • 1 1/4 C @bobsredmill almond flour
  • 1 1/4 C @arrowheadmills oat flour
  • 1 1/2 tsp baking powder
  • 1 TBSP @sunfood ground flax
  • 1 tsp cinnamon
  • 1/2 tsp salt

Toppings

  • @purely_elizabeth granola
  • @lilys_sweet keto chocolate chips
  • @manitobaharvest hemp seeds

Preparation

  1. Preheat oven to 375.

  2. In a large bowl combine mashed banana, peanut butter, cashew milk and vanilla.

  3. Add in remaining dry ingredients (except toppings). Stir until well combined. The batter will be pretty thick.

  4. Transfer to lightly oiled muffin tin. Top with assorted toppings (optional).

  5. Bake for 12 minutes (for mini muffins).
