Quick & Simple Vegan Pink Grapefruit Cinnamon Rolls

Ingredients

  • 1 x puff pastry sheet
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 30g icing sugar
  • 2 tsp tropicana
  • pinch of sea salt

Preparation

  1. Preheat the oven according to the puff pastry package instructions.Into a bowl, mix together brown sugar, cinnamon and a pinch of salt to combine

  2. Unroll puff pastry. Using a spoon sprinkle cinnamon brown sugar mixture evenly across the surface of the puff pastry.Tightly roll the puff pastry sheet diagonally.Using a sharp knife, slice the puff pastry into 2cm equal slices. TIP: To avoid squishing the puff pastry, dip the sharp knife into water before each slice

  3. Arrange puff pastry slices, spiral side facing up on a baking tray and place in the oven. Cook until lightly golden brown.Meanwhile in a bowl, mix together mixing sugar and Tropicana Juice, the glaze should be a little thick!Allow pastries to cool slightly before drizzling over pink icing sugar
