Strawberry Chocolate Bars

Ingredients

  • 2 cups sliced strawberries
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • shortbread
  • 2 cups almond flour
  • 1 cup rolled oats
  • 1/4 tsp flaky sea salt
  • 2 tbsp honey/maple syrup
  • 1 tbsp peanut butter
  • 1/4 cup melted coconut oil
  • chocolate layer
  • 1 cup dark choc. chips
  • 1 tbsp coconut oil

Preparation

  1. Add all jam ingredients to a blender and blend until smooth

  2. Transfer to a small saucepan and bring to a simmer and cook for 8-10 min

  3. Until thickened

  4. Pour into a small bowl and refrigerate until cooled

  5. Preheat oven to 350 degrees and line a small baking dish with parchment paper

  6. Add all shortbread ingredients to a food processor

  7. Process until a soft dough forms

  8. Press evenly onto bottom of baking dish

  9. Bake for 18-20 min

  10. Until golden brown

  11. Cool at room temp for 5 min

  12. Then transfer to freezer to completely cool

  13. Once shortbread and jam have cooled, spread jam over in an even layer

  14. Transfer to freezer for 20-25 min

  15. Until hardened slightly

  16. Melt choc

  17. Chips and coconut oil in a double boiler

  18. Spread over choc

  19. In even layer

  20. Freeze for an additional 10 min

  21. Cut into some messy bars and enjoy ?
