Healthy Homemade Twix Bars

Ingredients

Cookie layer

  • 1 cup almond flour
  • 1/8 cup coconut sugar
  • 1/4 cup coconut oil
  • 1 tbsp maple syrup

Caramel layer

  • 1 cup Medjool dates, pitted and soaked in hot water for 10 minutes
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract

Chocolate covering

  • 1 slab of 85% dark chocolate

Preparation

  1. Preheat the oven to 180°C.

  2. Mix all the ingredients for the cookie layer.

  3. Firmly press the mixture into a lined baking tray.

  4. Bake for 15-20 minutes until golden, then set aside to cool.

  5. Drain the soaked dates.

  6. Place the dates in a food processor.

  7. Add the peanut butter and vanilla extract, then blend until smooth.

  8. Spread the caramel mixture evenly over the cooled cookie layer.

  9. Melt the dark chocolate.

  10. Drizzle the melted chocolate over the bars.

  11. Place in the fridge or freezer for at least one hour to set.
