Strawberry Coconut Chocolate Slice

Ingredients

Base

  • 1 cup almond meal
  • 1/3 cup corn flour
  • 2 tbs coconut oil
  • 2 tbs maple syrup

Strawberry centre

  • 1 1/2 cup frozen strawberries
  • 1/4 cup desiccated coconut
  • 75g coconut yoghurt
  • 2 tbs maple syrup

Choc coating

  • 60g dark chocolate
  • 3 tbs coconut oil

Preparation

  1. Preheat oven to 180°C

  2. Combine base ingredients in a bowl and mix together well

  3. In a lined baking tray firmly press base ingredients to form biscuit base

  4. Place in oven for 20 minutes or until golden

  5. Once cooked put in the fridge to cool

  6. For centre: place ingredients in a blender and pulse until blended (should still be chunky, not totally smooth)

  7. Pour mixture over biscuit base and put in the freezer to set

  8. Melt together chocolate and coconut oil

  9. Pour over set mixture

  10. Cut into desired slice sizes

  11. Store in freezer

  12. These are great to eat straight from the freezer but if you want the centre to be a bit softer, leave them in the fridge for around 5 minutes before eating
