Strawberry Rhubarb Coconut Milk Ice Cream
Ingredients
- 2 cans full fat coconut milk
- 1/3 cup maple syrup or coconut sugar
- 1 tsp vanilla extract
- dash of salt
- sauté 1 cup chopped rhubarb
- 1/2 cup diced strawberries
- 1/4 cup of unsweetened strawberry jam
- a bit of water so that it doesn't burn
Preparation
Then pour in ice cream machine
When the rhubarb is soft all the way through, mash everything together so that it becomes a jam like consistency
