Strawberry Rhubarb Coconut Milk Ice Cream

Ingredients

  • 2 cans full fat coconut milk
  • 1/3 cup maple syrup or coconut sugar
  • 1 tsp vanilla extract
  • dash of salt
  • sauté 1 cup chopped rhubarb
  • 1/2 cup diced strawberries
  • 1/4 cup of unsweetened strawberry jam
  • a bit of water so that it doesn't burn
