Vanilla & Lemon Birthday Cake

Ingredients

  • lemon layer:
  • 3 eggs
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup maple syrup
  • 1 tsp baking powder
  • 1 tbsp zest of lemon
  • 1/2 lemon squeezed
  • 1 1/2 tbsp melted ghee or softened butter-
  • vanilla layer:
  • 3 eggs
  • 3/4 cup almond flour

  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 1/2 tbsp melted ghee or softened butter-

Preparation

  1. Preheat oven to 350f

  2. Lemon layer:

  3. In a bowl, whisk the eggs

  4. Then add in the flour, lemon zest, maple syrup, baking powder, lemon juice, and butter

  5. Mix everything together well with a mixer

  6. Then grease a 6 inch cake pan and add the batter

  7. Bake in the oven for 35-38 minutes

  8. Vanilla layer:

  9. In a bowl, whisk the eggs

  10. Then add in the flour, vanilla, coconut sugar, baking powder, and butter

  11. Mix everything together well with a mixer

  12. Then grease a 6 inch cake pan and add the batter

  13. Bake in the oven for 35-38 minutes

  14. Let both layers cool completely

  15. Then take a knife and loosen them around the edges

  16. Remove the cakes

  17. Add frosting on top of one

  18. Then stack the other on top of the iced one

  19. This creates the middle layer of icing so make it as thick as you want

  20. After you stack the cakes, add frosting all around with either a knife or a pastry knife
