Vanilla & Lemon Birthday Cake
Ingredients
- lemon layer:
- 3 eggs
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup maple syrup
- 1 tsp baking powder
- 1 tbsp zest of lemon
- 1/2 lemon squeezed
- 1 1/2 tbsp melted ghee or softened butter-
- vanilla layer:
- 3 eggs

- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1 tsp vanilla
- 1 1/2 tbsp melted ghee or softened butter-
Preparation
Preheat oven to 350f
Lemon layer:
In a bowl, whisk the eggs
Then add in the flour, lemon zest, maple syrup, baking powder, lemon juice, and butter
Mix everything together well with a mixer
Then grease a 6 inch cake pan and add the batter
Bake in the oven for 35-38 minutes
Vanilla layer:
In a bowl, whisk the eggs
Then add in the flour, vanilla, coconut sugar, baking powder, and butter
Mix everything together well with a mixer
Then grease a 6 inch cake pan and add the batter
Bake in the oven for 35-38 minutes
Let both layers cool completely
Then take a knife and loosen them around the edges
Remove the cakes
Add frosting on top of one
Then stack the other on top of the iced one
This creates the middle layer of icing so make it as thick as you want
After you stack the cakes, add frosting all around with either a knife or a pastry knife
