Vegan Choc Chunk Cookies

Ingredients

  • 50g softened dairy-free butter
  • 70g brown sugar
  • 2 tbsp caster sugar
  • 1 tbsp almond milk
  • 100g plain flour
  • 1/2 tsp baking powder
  • 90g dark chocolate, chopped
  • 30g white chocolate, chopped (optional)

  • preheat oven to 180 degrees?
  • mix in almond milk ?
  • sift in the flour and baking powder and stir.

Preparation

  1. Preheat oven to 180 degrees?

  2. Whisk together the ‘butter’ and both sugars in a bowl until fluffy

  3. Mix in almond milk

  4. Sift in the flour and baking powder and stir

  5. Mix in chocolate chunks ?, then roll dough into 6 equal balls on a lined baking tray

  6. Leave space between each and flatten slightly with the back of a spoon

  7. Pop in the oven for approx 10 mins, you want the cookies to be golden on top and a little soft on the inside when cut

  8. Remove and leave to cool before devouring with your friends, or gifting to a veganuary-er to get them through the last two days
