Vegan Choc Chunk Cookies
Ingredients

- 50g softened dairy-free butter
- 70g brown sugar
- 2 tbsp caster sugar
- 1 tbsp almond milk
- 100g plain flour
- 1/2 tsp baking powder
- 90g dark chocolate, chopped
- 30g white chocolate, chopped (optional)

- preheat oven to 180 degrees?
- mix in almond milk ?
- sift in the flour and baking powder and stir.
Preparation
Preheat oven to 180 degrees?
Whisk together the ‘butter’ and both sugars in a bowl until fluffy
Mix in almond milk
Sift in the flour and baking powder and stir
Mix in chocolate chunks ?, then roll dough into 6 equal balls on a lined baking tray
Leave space between each and flatten slightly with the back of a spoon
Pop in the oven for approx 10 mins, you want the cookies to be golden on top and a little soft on the inside when cut
Remove and leave to cool before devouring with your friends, or gifting to a veganuary-er to get them through the last two days
