Vegan Halva and Chocolate Peachey Popsicles

Ingredients

Halva coconut layer

  • 3/4 cups raw cashews
  • 1 can Organic Coconut Milk (using only the solid portion)
  • 2 tbs freshly squeezed lemon juice
  • 1 tbs @halvana artisanal classic Halva
  • 2 tsp organic maple syrup
  • 3 dates, pits removed
  • A dash of Himalayan salt
  • Peaches, thinly sliced

Chocolate layer

  • 1/2 cup each vegan semi-sweet and bittersweet chocolate chips
  • 1/2 tsp coconut oil

Toppings

  • Halva Pistachio Crumble, by @halvana

Preparation

  1. Add the cashews to a small sauce pan and bring it to a boil, at low temperature, for 15-20 min. Remove from heat and set aside until it reaches room temperature.

  2. Add the cashews, the coconut milk (the solid portion only), the lemon juice, the Halva, the dates, the maple syrup and the Himalayan salt to a high speed blender and blend until smooth.

  3. Pour Halva blend into the popsicle mould.

  4. Add the wood sticks to the popsicles and Freeze for a min of 4 hrs or until firm.

  5. Prepare the chocolate sauce by placing a small saucepan over low heat, adding the chocolate chips and the coconut oil, stirring frequently until melted and smooth.

  6. Once the popsicles have been frozen, remove them from the freezer, and then from the popsicle mold and dip them into the cacao sauce. Add the pistachio Halva crumbled on top!
