Cookies and Cream No-Bake Bars
Ingredients
Crust
- 2.5 cups of your favorite crispy chocolate cookies
- 1/4 cup coconut oil
Filling
- 2 cups raw cashews, soaked 3+ hours
- 1/2 cup canned coconut milk
- 1/3 cup maple syrup
- 1/4 cup coconut oil
- 1 tbsp lemon juice
- extra cookies for topping
Preparation
Process cookies into a sandy crumb texture.
Add coconut oil and process until combined.
Press into an 8x8 inch pan lined with parchment paper.
Freeze.
Blend filling ingredients until very smooth.
Pour on top of the crust, top with more cookies, freeze overnight.
Slice and eat.
