Vegan No-Bake Chocolate Cherry Tartlets

Ingredients

Chocolate crust

  • 1 cup oats
  • 2 tbsp cocoa powder
  • 1/2 cup hazelnut, ground
  • 2 tbsp coconut oil, melted
  • 8 dates, pitted and chopped
  • 2 tbsp agave

Cherry filling

  • 250g (1 3/4 cup) fresh cherries, pitted and halved
  • 1/4 cup soy milk
  • 1 tsp agave
  • 1 tsp lemon juice
  • 1/2 tsp corn starch
  • 1/4 tsp agar agar

Preparation

  1. Place all crust ingredients in a food processor and process until a sticky dough forms.

  2. Press the dough into tart tins.

  3. Place the tins in the refrigerator while making the filling.

  4. Place all filling ingredients except corn starch and agar agar in a food processor and blend until well combined.

  5. Pass the mixture through a sieve and pour into a saucepan.

  6. Add corn starch and agar agar and bring to a brief boil, stirring continuously.

  7. Pour into a bowl and let cool until lukewarm, stirring occasionally.

  8. Spread the filling over the crust and refrigerate for at least 4 hours.

  9. Garnish with cherries.
