Vegan No-Bake Chocolate Cherry Tartlets
Ingredients
Chocolate crust
- 1 cup oats
- 2 tbsp cocoa powder
- 1/2 cup hazelnut, ground
- 2 tbsp coconut oil, melted
- 8 dates, pitted and chopped
- 2 tbsp agave
Cherry filling
- 250g (1 3/4 cup) fresh cherries, pitted and halved
- 1/4 cup soy milk
- 1 tsp agave
- 1 tsp lemon juice
- 1/2 tsp corn starch
- 1/4 tsp agar agar
Preparation
Place all crust ingredients in a food processor and process until a sticky dough forms.
Press the dough into tart tins.
Place the tins in the refrigerator while making the filling.
Place all filling ingredients except corn starch and agar agar in a food processor and blend until well combined.
Pass the mixture through a sieve and pour into a saucepan.
Add corn starch and agar agar and bring to a brief boil, stirring continuously.
Pour into a bowl and let cool until lukewarm, stirring occasionally.
Spread the filling over the crust and refrigerate for at least 4 hours.
Garnish with cherries.
