Vegan Twix Cups

Ingredients

  • rust
  • mix together 1 cup almond flour, 2 tbsp maple syrup & 3 tbsp coconut oil into a dough. use 1 tbsp dough to press flat into the bottom of each cup. bake for 10 mins, then let cool

Preparation

  1. Note: 10 mins of bake time, but 1.5 hours of cooling/freezing time (if you share my impatience, this is IMPORTANT to know!!!)

  2. Preheat oven to 350° & oil/line a muffin tin. mine made 9 regular size muffin cups, og recipe uses a mini muffin tin

  3. Caramel

  4. Soak 1 cup pitted dates in boiling water to soften. to a food processor add dates, 1/4 cup almond butter, splash of vanilla & 1-2 tbsp warm water to help blend. blend together until smooth, then set aside in fridge/freezer to cool

  5. Spread caramel on top of the cooled crust, then set in the freezer for 30 mins

  6. Chocolate

  7. Melt together a handful of semisweet chocolate chips together with 2 tbsp coconut oil, heating in microwave for 10 sec intervals & stirring. mix in 1/4 cup cacao powder, 2 tbsp maple syrup & 3 tbsp oat milk. if clumps, microwave x10sec again until smooth. set aside to cool while caramel is freezing

  8. Pour chocolate over top, then set in freezer for 1 hour until hardened. store in the freezer for a PERFECT cool indulgent treat! just in time for the heat wave
