Ingredients

  • Dry ingredients-
  • 1 cup gluten free oat flour
  • 1 1/2 cup gluten free rolled oats
  • 1tsp baking powder
  • 1/2 cup coconut sugar
  • 1/2tsp ground cinnamon
  • 1/4tsp ground nutmeg
  • 1/8tsp ground cloves
  • Wet ingredients-
  • 1/4tsp sea salt
  • 1/2 cup coconut oil (melted)
  • 1tbsp flax mixed w/ 3tbsp warm water
  • 2tsp vanilla extract
  • 2tbsp maple syrup
  • 3/4 cup raisins
  • 1/3 cup pumpkin seeds
  • 1/4 cup @xocousa baking dark chocolate (chopped)

Preparation

  1. Preheat oven to 350 degrees F

  2. In a large bowl combine all dry ingredients and set aside

  3. In another bowl combine all wet ingredients

  4. Slowly pour wet mixture into dry mixture bowl and mix until well incorporated

  5. Add raisins, pumpkin seeds and chocolate into cookie batter and mix

  6. Place cookie batter into fridge for 10 minutes

  7. Line a baking sheet with parchment paper

  8. Take cookie batter out of fridge and using and ice cream scooper, scoop out cookie batter, form into cookie shape and place on baking sheet. Repeat until you’ve used up all of the cookie batter

  9. Bake cookies for 14 minutes

  10. Place cookies on a cookie rack and let cool for 10 minutes before eating
