Fruity Spinach Salad with Strawberry Vinaigrette
Ingredients
Dressing
- 8 medium organic strawberries
- 1/3 cup balsamic vinegar
- 1/3 cup extra virgin olive oil
- 1/3 cup water
- 1/4 cup poppy seeds
- 2 cloves of garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Salad
- 1 bag of organic spinach
- 1/2 cup organic strawberries sliced
- 3/4 cup organic blueberries
- 1 cup cut watermelon in small cubes
- 1/2 avocado cut in any shape
- 1/2 cup green organic grapes washed and sliced in half
- 1 kiwi sliced
- 1/3 cup toasted pumpkin seeds
- 3 tablespoons of hemp seeds
Preparation
Blend all dressing ingredients in a blender until smooth.
Arrange the salad ingredients in a bowl.
Drizzle the dressing over the salad and serve.
