Dreamy Rainbow Salad with Tahini Poppy Seed Dressing
Ingredients
Tahini poppy seed dressing
- 1/4 cup runny tahini
- 2-3 tbsp cold water
- Juice of 1 lemon
- 1 tbsp white wine or apple cider vinegar
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp poppy seeds
- Salt and black pepper to taste
Rainbow salad
- Finely chopped kale
- Avocado
- Strawberries
- Cucumber
- Cherry heirloom tomatoes
- Red radishes
- Mini sweet peppers
- Sourdough croutons
Preparation
Whisk together all dressing ingredients until smooth and season to taste with salt and black pepper.
Mix some of the dressing with the chopped kale.
Top with sliced vegetables and fruit.
Serve with remaining dressing on the side.
Tips
The dressing keeps well in the fridge for several days.
