Wholesome Veggie Bowl with Lemon Tahini Dressing
Ingredients
- Kobocha Squash
- Chickpeas
- Vegan feta crumbles
- Cucumbers
- Plantains
- Avocado
- Spinach
Dressing
- 1/2 cup tahini
- Juice from 1 lemon
- 3 tbsp water
- 1 tbsp maple syrup
- 1 minced garlic clove
- 1 tsp black pepper
- Salt to taste
Preparation
Roast the Kobocha Squash until tender.
Roast the chickpeas until crispy.
Fry the plantains until golden brown.
Prepare an avocado rose.
Arrange the ingredients on a bed of spinach.
Drizzle with the lemon tahini dressing.
Dressing
Mix all dressing ingredients together until smooth consistency.
