Wholesome Veggie Bowl with Lemon Tahini Dressing

Ingredients

  • Kobocha Squash
  • Chickpeas
  • Vegan feta crumbles
  • Cucumbers
  • Plantains
  • Avocado
  • Spinach

Dressing

  • 1/2 cup tahini
  • Juice from 1 lemon
  • 3 tbsp water
  • 1 tbsp maple syrup
  • 1 minced garlic clove
  • 1 tsp black pepper
  • Salt to taste

Preparation

  1. Roast the Kobocha Squash until tender.

  2. Roast the chickpeas until crispy.

  3. Fry the plantains until golden brown.

  4. Prepare an avocado rose.

  5. Arrange the ingredients on a bed of spinach.

  6. Drizzle with the lemon tahini dressing.

Dressing

  1. Mix all dressing ingredients together until smooth consistency.
