Scrambled No-Egg

Ingredients

  • 1/2 cup (60 g) chickpea flour or use 1/2 cup + 1 or 2 Tbsp more besan/gram flour
  • * 1/2 cup (125 ml) water
  • * 1 tbsp nutritional yeast
  • * 1 tbsp flax seed meal
  • * 1/2 tsp (0.5 tsp) baking powder
  • * 1/4 tsp (0.25 tsp) salt
  • * 1/4 tsp (0.25 tsp) turmeric
  • * 1/4 tsp (0.25 tsp) or less paprika
  • * 1/8 tsp (0.13 tsp) kala namak Indian sulphur black salt for the eggy flavor
  • * generous dash of black pepper

Preparation

  1. Blend all of your ingredients, and set this mixture aside

  2. Begin to sauté onion and garlic for an extra burst of flavour (and health) over medium heat, and add any veggies you desire

  3. Finally, pour your chickpea flour over your veggies and cook for 2 minutes or until your edges are set

  4. Drizzle 1/2 of oil on the edges, and begin to get your scramble on

  5. Once scrambling, leave to cook for 2 minutes to set before scrambling again, and continue to cook until your mixture appears to be dry and ready to devour

  6. Finally, serve up your cruelty-free scramble and enjoy
