Vegan Omelette

Ingredients

  • the ingredients are for the omelette but you also need a filling ⁠
  • filling ?⁠
  • 1 medium tomato⁠
  • 1/2 red onion⁠
  • 1 cup white button mushrooms⁠
  • 2 cups fresh spinach⁠
  • 1 tbsp olive oil⁠

Preparation

  1. Chop the onion, tomato, mushrooms and add together with the oil in a large skillet⁠

  2. Cook until onion is golden brown, then add the spinach and cook for an additional 3-4 minutes⁠

  3. Prepare the omelette mixture by whisking together in a large bowl the chickpea flour, soy milk, nutritional yeast, baking powder, turmeric, black pepper and black salt⁠

  4. Using a non-stick pan pour 1/2 of the mixture and cook for 3-5 minutes until bubbles appear⁠

  5. Add 1/2 the filling on one side and fold in half⁠

  6. Cook for an additional 2-3 minutes until ready⁠

  7. Repeat for the 2nd one and enjoy!⁠
