No Bake Mango Cheesecake

Ingredients

  • 250gms mascarpone
  • 250gms full-fat cream cheese
  • 100gms icing sugar
  • 1 chopped Alphonso mango - drained & dried on a kitchen towel

Base

  • 125gms lotus biscuits
  • 40gms butter
  • 2 tsp cinnamon

Preparation

  1. Crush the biscuits.

  2. Melt the butter in the microwave.

  3. Mix crushed biscuits, cinnamon & butter in a bowl. Then flatten the mix into the base of the cake tin. Press well. Pop into the fridge to set.

  4. Peel and finely chop the mango. Drain well on kitchen paper.

  5. Fold the icing sugar, mascarpone & cream cheese together in a large bowl. Be careful not to over mix it so it stays stiff.

  6. Fold in the chopped mango chunks.

  7. Pour this mix onto the biscuit base.

  8. Cover and refrigerate at least 2-3 hours before serving.

  9. Enjoy 😋

  10. Optional extra - Heat a tablespoon of milk with a pinch of saffron strands and stir into the cheesecake mix.

  11. Optional extra - Top with fresh passion fruit.
