Mini Lemon Passion Fruit Pavlova with Vegan Lemon Passion Fruit Curd
Ingredients
- 1/2 cup lemon juice, freshly squeezed
- 1/2 cup passionfruit pulp (approx 7-8 small passion fruit)
- 100g vegan butter
- 1/2 cup caster sugar
- 1 tbsp lemon zest
- 2 tbsp cornflour/cornstarch
- 2 tbsp water
- 100g @naturescharm Sweetened Condensed Oat Milk
Preparation
Scoop the flesh and pass through a sieve to separate out the seeds. Use the back of a spoon to press and squeeze out all of the pulp. Reserve the seeds for later.
Add the butter to a saucepan and melt over medium heat. Add in the lemon juice, passion fruit pulp, caster sugar, and lemon zest. Simmer for 5 minutes.
In a small bowl, mix together the cornflour and water to form a paste. Add the cornflour mix to the saucepan and simmer for another 3 minutes, whisking vigorously.
Remove from the heat and add the sweetened condensed oat milk, whisk well to combine.
Lastly, add 1 tablespoon of the reserved passion fruit seeds back to the curd and mix well. Allow to cool to room temperature for 30 minutes before transferring to the fridge to chill until ready to use.
