Tamarind and Tiger Nuts Horchata

Ingredients

  • 1 cup tiger nuts
  • 3 cups water for tiger nut milk
  • 1 cup tamarind
  • 1 cup warm water for tamarind paste
  • 1/2 teaspoon vanilla

Preparation

  1. Soak 1 cup of tiger nuts in water overnight.

  2. Blend the soaked tiger nuts with 3 cups of water to make tiger nut milk; the pulp can be used as a facial scrub or in cooking.

  3. Peel and clean the tamarind.

  4. Soak the tamarind in 1 cup of warm water for 1 hour.

  5. Push the soaked tamarind and water through a sieve to remove seeds and make paste; store the paste in the fridge for 2-3 days.

  6. In a blender, combine 2 cups of tiger nut milk, 3/4 cup of tamarind paste, and 1/2 teaspoon vanilla.

  7. Blend until smooth and serve. This drink is refreshing, naturally sweet, and beneficial for digestion.
