Chocolate Nice Cream with Chickpea Cookie Dough Bites

Ingredients

  • Blend 2 frozen bananas with 2 T raw cacao powder on high in blender. Pour into bowl
  • For the cookie dough bites
  • 1 1/2 cups cooked chickpeas
  • 7-10 medjool dates
  • 4-7 drops liquid stevia or more dates to taste
  • 2 t vanilla extract
  • 1/4 cup coconut flour
  • 1/4 cup oat flour
  • 1/4 cup quick or rolled oats
  • 1/4 cup choc chips or raw cacao nibs

Preparation

  1. Add chickpeas and dates to food processor and process until smooth

  2. You don't want chunks of beans here!! Add vanilla extract and taste

  3. If not sweet enough, add liquid stevia (I ❤️ @sweetleafstevia sweet drops vanilla) or more dates to taste

  4. Then add coconut flour and oat flour and process again

  5. The mix should look and taste like cookie dough now!! ? Finally, add quick or rolled oats and chocolate chips or raw cacao nibs, pulse a few times, and roll into cookie dough bites

  6. Enjoy alone or on your chocolate nice cream
