Lemon Rafellos

Ingredients

  • 1.5 cups desiccated coconut (plus a little extra for rolling)⠀
  • 1 cup flaxseed meal (ground flaxseeds)⠀
  • 4 tbsp coconut oil⠀
  • 2 tbsp rice malt syrup (see below for substitute)⠀
  • 1 lemon (juice and zest)⠀
  • 1 tbsp vanilla extract (optional)⠀
  • 1 pinch salt⠀

Preparation

  1. Place all ingredients into the food processor

  2. Blend until all ingredients are thoroughly mixed

  3. Roll mixture into approx 12 balls

  4. Roll each ball in desiccated coconut to decorate

  5. Place balls into freezer for approx 30 minutes and then store in the fridge

  6. Enjoy x ?
