Peanut Butter Noodles

Ingredients

  • 1 lb spaghetti noodles
  • 1/2 cup smooth peanut butter
  • 1 tbl grated @the_ginger_people
  • 14 oz canned coconut milk
  • 4 cloves garlic
  • 2 tbl soy sauce (or aminos)
  • 1 tsp curry powder
  • 1/2 cup pasta water

Preparation

  1. Cook the spaghetti to Al Dente in salted water

  2. Reserve 1/2 cup water before draining

  3. Whisk together the sauce ingredients in the pot used to cook the pasta

  4. Toss the noodles into the sauce and add veggies

  5. Easy and delicious
