10 Minute Mushroom & Edamame Panang Curry
Ingredients
- mushrooms
- beans in garlic
- curry paste
- coconut milk
- basmati rice
Preparation
I needed to go food shopping and only had mushrooms in my fridge so just fried those and some frozen edamame beans in garlic and @sainsburys panang curry paste, and after a few minutes added coconut milk and simmered for about 10 minutes
Whilst that was simmering away, I cooked up some basmati rice and once that was done served it in my fave @coconutbowls bowl and topped with @sainsburys mango chutney, spring onions, fresh coriander and of courses a load of cracked black pepper
