25-Minute Vegan Tikka Masala

Ingredients

  • 400g tofu
  • 1 onion
  • 2 cloves garlic
  • 3 teaspoons ginger
  • 3 teaspoons turmeric
  • 3 teaspoons garam masala
  • 1 teaspoon chili
  • 1 can tomato paste (140g)
  • 2 cans coconut milk (800 ml)

Preparation

  1. Press the water from the tofu, chop into small pieces, and fry in an oily pan until golden and crispy. Set aside.

  2. Fry onions and garlic in olive oil on the pan. Add garlic, ginger, turmeric, garam masala, and chili, and stir until warm.

  3. Pour in tomato paste and coconut milk. Let it simmer under medium heat for 10-15 minutes.

  4. Taste and add salt and black pepper if needed.

  5. Pour in the fried tofu and other vegetables if desired before serving.

  6. Serve with rice, soy creme fraiche, lime, and parsley.

Tips

  1. You can add almost any seasonal vegetables for variation.
