Afelia's Peri Peri Chicken

Ingredients

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp white distilled vinegar
  • 1 tsp salt
  • 1/2 tsp kashmiri chilli powder
  • 1/2 tsp coarse ground black pepper
  • 1/2 tsp paprika
  • 1/4 tsp red food colouring
  • 1/4 tsp yellow food colouring
  • 1 whole scotch bonnet pepper (seeds included)

Preparation

  1. Blitz all of the listed ingredients (minus the chicken legs of course) in a blender to make a smooth marinade

  2. Score the chicken legs using a sharp knife

  3. Coat the legs with the marinade and leave for at least 30 mins, preferably overnight, before cooking

  4. Preheat your oven to gas mark 6 (200°c, 400°f) and roast for 35 - 40 mins

  5. Place the legs the wrong side up in the roasting tin and turn them over half way, so that the chicken legs finish cooking the right side up

  6. I like to grill/broil my chicken for a further 5 - 8 minutes once cooked to ensure a nice brown colour on the outside

  7. Enjoy your delicious chicken with sides of your choice
