Bbq Tofu Cauliflower Lettuce Wraps

Ingredients

  • 1/2-1 head cauliflower, broken into florets
  • 1 block tofu, pressed and patted dry, cut into cubes
  • 2 tsp paprika
  • 2 tsp cumin powder
  • 2 tsp chili powder
  • 2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Ground pepper
  • 4 Tbsp tamari
  • 3 Tbsp maple syrup
  • 3 Tbsp sriracha or favorite hot sauce
  • 3-4 Tbsp olive oil
  • 2 Tbsp tomato paste

Preparation

  1. Preheat the oven to 425 F.

  2. Place the tofu and cauliflower in a large bowl.

  3. Mix together the paprika, cumin powder, chili powder, garlic powder, kosher salt, smoked paprika, cayenne pepper and ground pepper.

  4. Sprinkle the spice mixture evenly over the tofu and cauliflower.

  5. Place parchment paper on a cookie sheet and transfer the tofu and cauliflower to the sheet.

  6. Roast for 15 minutes, flip, and roast again for 10 more minutes.

  7. Coat with BBQ sauce and place back in oven for 5-10 minutes until caramelized.
