Cauliflower Rice Paella
Ingredients
- a 350g bag of frozen seafood mix
- 4 bags of frozen cauliflower rice
- tin of chopped tomatoes
- 2 star anise
- 2 tbsp cawkys smokey saffron spice mix
Preparation
Fry the onion in a tsp olive oil then add the tinned tomatoes and spices. Simmer for 15 minutes then add the cauliflower rice and heat through. Add the seafood mix and cook for 5 minutes to hear through and reduce the sauce. Remove the start anise and serve. I added 2 tbsp of parmesan cheese after the photos
A few tweaks in mind for next time to make it richer and the sauce less watery
