Cheesy Zucchini Noodles with Homemade Marinara and Meatballs

Ingredients

  • For the Marinara
  • 2 carrots, 1 stalk of celery, 5 cloves of garlic, an onion, 1 small can of tomato paste, 1tbs of capers, 1tsp of dried thyme, 1/4tsp of dried chili flakes, 1/2cup of red wine, 2-400gr cans of diced tomatoes, 2tbs of honey, a bunch if parsley (you can NEVER add enough parsley to a meal) and a crackle of pepper
  • For the Meatballs
  • 800gr lean meat (make sure to pour out the unneccesairy fat!), 1.5tsp of both onion and garlic powder, even more fresh parsley, 1/2tsp of dried oregano and thyme, 1 egg, 1/2 tsp of chili flakes, 2tbs of grated romano cheese, few cracks of black pepper
  • For the zoodles
  • 1 broccoli, 1 bell pepper of choice, 1 onion, 1/2tsp of dried thyme, 3 cloves of garlic, 3 large zucchini spiralized, squeeze of lemon juice, EVEN MORE parsley, 1tbs of the grated romana cheese and a couple cracks of black pepper
