Classic French Vegetable Ratatouille
Ingredients
- 1 eggplant
- 2 red onions
- 1 zucchini
- 1 red bell pepper
- 2 garlic cloves
- 3 tablespoons olive oil
- 3 bundles thyme
- 1/2 bundle basil
- 600 grams chopped tomatoes
- 2 tablespoons balsamic vinegar
- 2 teaspoons salt
- pepper
- splash of red wine
Preparation
Cut the eggplant, zucchini and paprika into pieces
Heat oil in a pot
Add the veggies and roast them for 5 minutes then place aside
Chop the onions and garlic
Put both in a new pot and caramelize
Chop the thyme and basil
Add the veggies, herbs, tomatoes, balsamic vinegar, salt and pepper to the pot
Let simmer for 40 minutes with the lid on top
Taste adding a splash of wine and readjusting with spices
Serve with fresh baguette and topping each dish with fresh basil
