Dilly Dilly Pickle Potato Salad
Ingredients
- 1 small bag of Baby red bliss potato’s
- @followyourheart soy free veganaise
- Claussen dill pickle slices
- Dijon mustard
- Fresh dill and spring onion
- Salt, pepper, onion powder
Preparation
Step 1. Cut potato’s into halves or quarters as needed depending on size
Step 2. Boil potatoes- set aside to cool
Step 3. Make dressing- combine 1/2 cup of the mayo 1 TB of Dijon mustard and 1/4 cup of pickle juice - whisk together
Step 4. - chop and add about 6 pickle slices into bite size pieces. Whisk in dressing
Step 5. Wash and chop 1 bunch of fresh dill and 1 bunch of spring onion. Mix in dressing
Step 6. Once potatoes are cool, combine dressing with potatoes. Season with salt, pepper and a dash of onion powder
