Dilly Dilly Pickle Potato Salad

Ingredients

  • 1 small bag of Baby red bliss potato’s
  • @followyourheart soy free veganaise
  • Claussen dill pickle slices
  • Dijon mustard
  • Fresh dill and spring onion
  • Salt, pepper, onion powder

Preparation

  1. Step 1. Cut potato’s into halves or quarters as needed depending on size

  2. Step 2. Boil potatoes- set aside to cool

  3. Step 3. Make dressing- combine 1/2 cup of the mayo 1 TB of Dijon mustard and 1/4 cup of pickle juice - whisk together

  4. Step 4. - chop and add about 6 pickle slices into bite size pieces. Whisk in dressing

  5. Step 5. Wash and chop 1 bunch of fresh dill and 1 bunch of spring onion. Mix in dressing

  6. Step 6. Once potatoes are cool, combine dressing with potatoes. Season with salt, pepper and a dash of onion powder
