Dilly Dilly Pickle Potato Salad
Ingredients
- 1 small bag baby red bliss potatoes
- @followyourheart soy free veganaise
- Claussen dill pickle slices
- Dijon mustard
- Fresh dill
- Spring onion
- Salt
- Pepper
- Onion powder
Preparation
Cut potatoes into halves or quarters as needed depending on size
Boil potatoes and set aside to cool
Make dressing by combining half a cup of the mayo, one tablespoon of Dijon mustard, and a quarter cup of pickle juice, then whisk together
Chop and add about six pickle slices into bite size pieces and whisk in dressing
Wash and chop one bunch of fresh dill and one bunch of spring onion, then mix in dressing
Once potatoes are cool, combine dressing with potatoes and season with salt, pepper, and a dash of onion powder
