Butter Bean Salad

Ingredients

  • 1/4 cup vegan mayo
  • 1/4 cup extra virgin olive oil
  • 1/4 cup green pimento olives
  • 1-2 tbsp olive juice/brine
  • 3 tbsp chopped fresh dill
  • 2 tsp dried chives
  • 2 tbsp sliced spring onion
  • 1/2 tsp chilli flakes
  • salt and pepper, to taste
  • handful cherry tomatoes, halved

Preparation

  1. Mix together everything except the cherry tomatoes

  2. Drain and rinse one 400g can of butter beans, then stir together well in a bowl until the beans are completely coated

  3. You may not need to use all of the dressing) add halved cherry tomatoes and garnish with extra spring onion and fresh dill
