Butter Bean Salad
Ingredients
- 1/4 cup vegan mayo
- 1/4 cup extra virgin olive oil
- 1/4 cup green pimento olives
- 1-2 tbsp olive juice/brine
- 3 tbsp chopped fresh dill
- 2 tsp dried chives
- 2 tbsp sliced spring onion
- 1/2 tsp chilli flakes
- salt and pepper, to taste
- handful cherry tomatoes, halved
Preparation
Mix together everything except the cherry tomatoes
Drain and rinse one 400g can of butter beans, then stir together well in a bowl until the beans are completely coated
You may not need to use all of the dressing) add halved cherry tomatoes and garnish with extra spring onion and fresh dill
