Dougie's Won Ton Soup
Ingredients
- 900 g ground pork
- 2 eggs
- 1 large bunch green onions (finely chopped)
- fresh mushrooms (sliced)
- 2 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- about 12 cups water
- 2 cubes chicken or vegetable stock
- 10-15 uncooked medium shrimp (optional)
- 1 medium head bok choy (finely chopped)
- 1 cup broccoli (in small pieces)
- 2 handfuls of snow peas
- one can baby corn
- one small can water chestnuts
- Gf soy sauce or Tamari sauce
Preparation
Prepare all the vegetables and set aside
Mix in a bowl the ground pork, most of the green onions, soy sauce, eggs, salt and pepper. Mix thoroughly with hands and place about a teaspoon full onto a baking pan and bake for about 20 mins
Bring the water to a boil in a large saucepan over medium heat and then add cooked pork and all vegetables ... add the peas for the last minute or two of cooking. Simmer the soup for about 5 minutes (until vegetables are cooked enough) and then add in the snow pea. Ladle soup into bowls and top with the remaining green onions and a dash of soy sauce. Enjoy
