Dougie's Won Ton Soup

Ingredients

  • 900 g ground pork
  • 2 eggs
  • 1 large bunch green onions (finely chopped)
  • fresh mushrooms (sliced)
  • 2 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • about 12 cups water
  • 2 cubes chicken or vegetable stock
  • 10-15 uncooked medium shrimp (optional)
  • 1 medium head bok choy (finely chopped)
  • 1 cup broccoli (in small pieces)
  • 2 handfuls of snow peas
  • one can baby corn
  • one small can water chestnuts
  • Gf soy sauce or Tamari sauce

Preparation

  1. Prepare all the vegetables and set aside

  2. Mix in a bowl the ground pork, most of the green onions, soy sauce, eggs, salt and pepper. Mix thoroughly with hands and place about a teaspoon full onto a baking pan and bake for about 20 mins

  3. Bring the water to a boil in a large saucepan over medium heat and then add cooked pork and all vegetables ... add the peas for the last minute or two of cooking. Simmer the soup for about 5 minutes (until vegetables are cooked enough) and then add in the snow pea. Ladle soup into bowls and top with the remaining green onions and a dash of soy sauce. Enjoy
