Garlic & Lemon Ovenbaked Fish

Ingredients

  • 6 - 8 pieces of white fish (ideally cod/haddock)_
  • 60g butter
  • 6 - 8 garlic cloves, finely sliced
  • 3 tbsp plain flour
  • 1/2 litre milk
  • water as needed
  • 1 tsp English mustard
  • 3/4 tsp of salt
  • handful of fresh chopped parsley
  • the juice of one lemon

Preparation

  1. Melt butter in a pan and add the sliced garlic - you want to infuse the butter with the garlic taste not cook it, so keep the flame low

  2. Next add plain flour to create a roux

  3. Add milk gradually to the roux, make sure the milk is absorbed into the flour + butter before adding more

  4. Once all the milk has been added, if the white sauce seems too thick, add some extra water to thin it out

  5. Add salt, mustard, the juice of one lemon and chopped parsley to the sauce

  6. Taste to make sure it's seasoned well and adjust if necessary

  7. Place the pieces of white fish in a baking dish or cast iron skillet and pour over the sauce, make sure the fish pieces are coated in the sauce

  8. Cook in a preheated oven at gas mark 6 (200°c, 392°f) for 15 - 20 mins or until the fish is cooked through

  9. Serve with your favourite sides (my cheesy mash or spiced roast potatoes go so well with this) and enjoy!
