Homemade Vegan Pizza with Cauliflower Cheese

Ingredients

Dough

  • 3 cups flour (360g)
  • 1 packet of yeast
  • 1 tbsp sugar
  • 1 1/2 tbsp olive oil
  • 1 cup warm water
  • 1/2 tsp salt

Vegan cheese

  • 1/2 cauliflower (375g)
  • 3.5 tbsp tapioca flour
  • 1 tbsp nutritional yeast
  • 1-2 tsp salt
  • 1/2 to 1 cup unsweetened non-dairy milk

Pizza sauce

  • 3/4 cup tomato sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley
  • 1/4 tsp oregano
  • a pinch of red pepper flakes

Preparation

  1. Warm 1 cup of water to 110-115°F (43-46°C)

  2. Pour the sugar and yeast packet into the warm water and let it sit for 10 minutes until foamy

  3. Sift half of the flour and salt into a large bowl

  4. Add the olive oil and activated yeast mixture, then gradually add the remaining flour while mixing until a sticky dough forms

  5. Knead the dough on a floured surface for about 1 minute, adding a little flour if too sticky or water if too dry, until smooth and soft

  6. Form the dough into a ball, place in an oiled bowl, cover with a towel, and let rise for at least 30 minutes or until doubled

  7. While the dough rises, cut the cauliflower into small chunks and boil until fork-tender

  8. Drain the cooked cauliflower and blend with the remaining vegan cheese ingredients and 1/2 cup non-dairy milk, adding more milk as needed

Pizza assembly

  1. Mix the pizza sauce ingredients in a bowl

  2. Preheat the oven to 475°F (245°C)

  3. Roll out the risen dough on a floured surface to form a pizza base

  4. Transfer the dough to a pizza pan or baking sheet

  5. Spread the pizza sauce evenly over the dough

  6. Spread the vegan cheese over the sauce

  7. Bake for 12-15 minutes until the crust is golden and the cheese is melted

Tips

  1. Warm the water in the microwave for about 30 seconds if a thermometer is not available

  2. Test the water temperature with your finger; it should feel like a very hot bath

  3. Add the flour in two halves to avoid adding too much at once; the amount of flour may vary by day

  4. Use as little non-dairy milk as possible when blending the cheese for a better texture
