Juicy Oven Roasted Chicken Breasts

Ingredients

  • 2 pounds boneless, skinless chicken breasts, about 4 medium size breasts
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder or paprika

Preparation

  1. Preheat oven to 450 degrees Fahrenheit and pound chicken breasts to an even thickness

  2. Pour olive oil into a 13x9 inch baking dish and lightly coat the chicken, then place the chicken breasts side by side in the dish

  3. Whisk together salt, pepper, garlic powder, onion powder, and chili powder or paprika in a small bowl, then sprinkle the mixture over both sides of the chicken and rub it in with your hands. Place the chicken breasts side by side without overlapping

  4. Bake for 15 to 20 minutes until the juices run clear or a meat thermometer reads 160-170 degrees Fahrenheit, adjusting the time as needed for the thickness of the chicken breasts

  5. Cover with foil and let rest for 5 to 10 minutes to allow the juices to settle before slicing

  6. Serve hot

  1. Roast chicken breasts at 425-450 degrees Fahrenheit for quick cooking and maximum moisture; lower temperatures may cause dryness
