Kid-Approved Spicy Bean Chili

Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, grated
  • 2 tbsp olive oil
  • 3 tsp ground coriander
  • 3 tsp ground cinnamon
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 tbsp tomato puree
  • 2 cans crushed tomatoes (or passata)
  • 1 can chickpeas
  • 1 can cannelini beans
  • 2 cans red kidney beans
  • 1/2 - 1 tsp chilli flakes
  • 1 veg stock cube
  • Salt

Preparation

  1. Put a large pan over a medium heat and cook the onion in the olive oil for about ten minutes.

  2. Add the garlic and cook for another couple of minutes.

  3. Add the spices and cook for another two minutes stirring so they don’t burn.

  4. Add the puree and cook for another minute.

  5. Pour in the tomatoes, fill both cans with water and pour that in too.

  6. Add the chickpeas, beans, stock cube and chilli and bring to a gentle boil.

  7. Lower the heat to a simmer and let it cook for about an hour till reduced; stir occasionally.

  8. Taste and season. Add more chili if you want it spicier.

Tips

  1. Serve with rice, whatever veggies you have in the fridge, smashed avocado and cornbread.

  2. It freezes beautifully so cook more and save for another day.
