M a P L E Glazed Salmon & Veggies

Ingredients

  • really any veggies you have handy! i used:
  • brussels sprouts
  • carrots
  • broccoli
  • cauliflower
  • pepper
  • onion
  • salmon
  • Salmon rub: 1/2 tbsp paprika 1/2 tbsp chili powder, 1 tsp coconut sugar, 1/2 tsp cayenne, salt & pepper
  • 2 tbsp maple syrup
  • 2 tbsp olive oil

Preparation

  1. Preheat oven to 400

  2. Wash & trim/chop veggies

  3. Toss in a bowl with 1 tbsp olive oil, salt & pepper {option to add chili flakes}

  4. Spread on a baking sheet with parchment paper & bake for 15 mins

  5. Meanwhile pat dry salmon, rub with olive oil & spice rub

  6. Remove veggies from oven & increase heat to 450

  7. Add salmon to baking sheet and bake for another 12 mins

  8. Remove & drizzle salmon with maple syrup

  9. Broil on high for 4-5 mins until salmon & veggies are crispy {careful not to burn!}
