M a P L E Glazed Salmon & Veggies
Ingredients
- really any veggies you have handy! i used:
- brussels sprouts
- carrots
- broccoli
- cauliflower
- pepper
- onion
- salmon
- Salmon rub: 1/2 tbsp paprika 1/2 tbsp chili powder, 1 tsp coconut sugar, 1/2 tsp cayenne, salt & pepper
- 2 tbsp maple syrup
- 2 tbsp olive oil
Preparation
Preheat oven to 400
Wash & trim/chop veggies
Toss in a bowl with 1 tbsp olive oil, salt & pepper {option to add chili flakes}
Spread on a baking sheet with parchment paper & bake for 15 mins
Meanwhile pat dry salmon, rub with olive oil & spice rub
Remove veggies from oven & increase heat to 450
Add salmon to baking sheet and bake for another 12 mins
Remove & drizzle salmon with maple syrup
Broil on high for 4-5 mins until salmon & veggies are crispy {careful not to burn!}
