Mackerel Satni

Ingredients

  • 1 whole mackerel (or you can use canned mackerel if this is more convenient)
  • 1/2 a red onion
  • 3 - 4 spring onions
  • 3 green/red chillies (adjust to taste)
  • a handful of fresh coriander
  • salt (to taste)

Preparation

  1. Remove the head of the mackerel and gut the fish, if you find this difficult ask the fishmonger to do it for you. Cut the mackerel in half and pan fry in a little oil for 3 - 4 minutes either side. Remove from pan and allow to cool

  2. While the fish cools slice/chop up all the fresh ingredients as finely as you can. Once the fish is cool enough to touch, remove all the bones. If you are using canned fish, make sure you drain the fish thoroughly

  3. Mix all of the chopped ingredients (onion, spring onions, coriander and chillies) with some salt (about 1/2 - 1 tsp, adjust to taste) until you can feel the ingredients becoming moistened

  4. Lastly add flaked mackerel and mix well

  5. Be sure to chill any extra leftover satni as this tends to spoil quickly if left out for too long, will last for 2 - 3 days in the fridge

  6. Super delicious served with plain basmati rice or eat with a healthy side of roasted vegetables
