Masala Oats

Ingredients

  • onion finely chopped 1 medium
  • one cup of pre cooked veg such as peas, carrots, green beans & cauliflower.
  • teaspoon of oil for non stick pan.
  • 1 teaspoon of madras curry powder.
  • 1 teaspoon ground cumin seeds
  • tomatoes finely chopped 1 medium
  • salt to taste
  • tomato paste
  • ginger paste
  • garlic paste

Preparation

  1. Heat oil in a non-stick pan, add cumin & curry powder

  2. Add green chillies and onion, mix well and sauté till the onion is golden

  3. Add tomatoes and salt, reduce heat, cover and cook for two to three minutes

  4. Add mixed veg

  5. Add red chilli powder and turmeric powder and mix well

  6. Add rolled oats, four cupswater, tomato paste, garlic paste, ginger paste and cook for four to five minutes

  7. Add one tablespoon coriander leaves and mix well

  8. Serve hot, garnished with the remaining coriander leaves

  9. You can use vegan curry sauce from a jar either

  10. I added 1/2 cup of madras curry sauce

  11. It needed a bit extra water too

  12. I didn’t pre-roast the oats like many recipes recommend
